Raita: Cucumber + Cilantro Salad

Raita: Cucumber + Cilantro Salad is a refreshing dish with any meal.

    Ingredients:

    • ½ cup plain yogurt
    • ½ chopped seeded cucumber
    • 2 Tbsp. chopped fresh cilantro
    • ¼ cup chopped green onions
    • ¼ cup chopped tomato (optional)
    • ¼ tsp. ground coriander
    • ¼ tsp. ground cumin

    Cooking:

    Makes about 2 cups raita. Mix all ingredients in medium bowl. Season to taste with salt. Chill raita, covered, until ready to serve.
