Onion Poha (Flattened Rice with Onions, Peanuts & Spices)

A light, flavorful Indian breakfast or snack.
- 2 cups thick poha (flattened rice), available at Indian grocery stores or online
- 2 tbsp oil (vegetable or canola)
- ½ tsp mustard seeds
- ¼ tsp cumin seeds
- ¼ tsp asafetida (hing), optional but adds authentic flavor
- 8-10 fresh curry leaves (found in Indian or Asian markets)
- 1 large onion, finely chopped
- 2-3 green chilies, finely chopped (adjust to taste)
- ½ tsp ground turmeric
- Salt, to taste
- ½ tsp sugar (optional, to balance flavors)
- 2 tsp roasted peanuts (optional, omit if allergic)
- ¼ cup fresh cilantro (coriander), chopped
- Juice of ½ lemon
- ¼ cup fresh grated coconut (optional, for garnish)

Instructions
1. Prepare the Poha
Place poha in a sieve and rinse under running water 2-3 times. Drain immediately—poha should be softened but not mushy. Set aside.
2. Cook the Base
Heat oil in a skillet over medium heat. Add mustard seeds, cumin seeds, and asafoetida. When mustard seeds start to pop, add curry leaves, onion, and green chilies. Sauté until onions turn soft and light pink.
3. Season
Stir in turmeric, salt, and sugar. Mix well.
4. Add Poha
Gently fold in the soaked poha, mixing until everything is evenly coated with the spices.
5. Finish
Add roasted peanuts and chopped cilantro. Toss gently to combine.
6. Serve
Serve hot with a squeeze of fresh lemon juice and a sprinkle of grated coconut if desired.
Tip: This dish is best enjoyed fresh but can be reheated gently in a skillet with a splash of water.
